BARBEQUE NATION STYLE CAJUN POTATOES | BABY POTATO RECIPE

Cajun Potato is a very popular and most liked dish in a famous restaurant called Barbeque Nation. It is served as a starter / appetizer before you proceed for other items. It is nothing but deep-fried baby potatoes topped or mixed with flavored mayonnaise. People who has cholestrol , diabetes and in diet, this is not for you since it has high calories in it. It tempts you to have more and more because of its creaminess😂 and hence loved by kids. Do try this at home by following the recipe below.

Preparation Time - 15 minutes | Cooking Time - 15  minutes | Total time - 30 minutes | Course  - Starter / Appetizer | Cuisine  - Indian  | Servings  - 6

Ingredients:

For flavored mayonnaise:
  1. Mayonnaise  - 1/4 cup
  2. Tomato ketchup - 1 tbsp
  3. Red Chilly Sauce - 1 tbsp
  4. Dried Oregano - 1/2 tbsp
  5. Red Chilly Flakes - 1/2 tbsp
  6. Garlic(finely chopped) /Garlic Powder - 1 tbsp  
  7. Onion(finely chopped) / Onion Powder - 1 tbsp 
  8. Red Chilly Powder - 1 tsp
  9. Lemon Juice - 1 tsp
  10. Milk - 3 tbsp
For deep-fried baby potato:
  1. Baby Potato - 10 to 15 (small)
  2. Corn Flour - 3 tbsp
  3. Rice Flour - 2 tbsp
  4. Dried Oregano - 1 tsp
  5. Red Chilly Flakes - 1 tsp
  6. Salt - 1 tsp
  7. Black Pepper Powder - 1 tsp
  8. Water - required amount
  9. Refined oil - add accordingly for shallow fry / deep fry
Method:

Pre -Preparations:
  1. Wash the baby potatoes in water thoroughly without leaving any particles over it .
  2. Pressure cook the baby potatoes filled completely in water and 1/2 tbsp of salt for 1 whistle.
  3. Open once the pressure settles by its own. Don't remove the skin. 
  4. Gently press the boiled potatoes at the top either by hand or a round surfaced object. 
For flavored mayonnaise:
  1. Finely chop garlic and onion into tiny pieces if you don't have garlic and onion powder.
  2. Take a bowl. Mix mayonnaise, tomato ketchup, red chilly powder, red chilly sauce, dried oregano, red chilly flakes, lemon juice, finely chopped garlic and onion / garlic powder and onion powder.
  3. Mix all the ingredients and add milk gradually in a table spoon until you achieve sauce consistency(neither thick nor watery).
For deep - fried baby potatoes:
  1. Take a bowl. Mix cornflour, rice flour, dried oregano, red chilly flakes, salt and pepper powder.
  2. Mix all the ingredients well and add water gradually ( in table spoon) until you achieve a slurry consistency.
  3. Take a kadai for deep - frying / pan for shallow fry. Add oil accordingly and heat it at high flame. I did deep frying.
  4. Dip the mashed baby potatoes in the slurry prepared and carefully put in the hot oil.
  5. Fry the baby potatoes until it becomes crispy at medium flame.
  6. Transfer the fried potatoes in a plate with tissue paper to absorb the excess oil.
  7. When you add next batch of potatoes, heat the oil at high flame and medium it after you put potatoes.

Pre -Preparations:

Step 1:

Boil baby potatoes with water & salt
Step 2:

Pressure cook for 1 whistle & open
after the pressure settles on its own

Step 3:
Press the top with a tumbler

Mash all the potatoes similarly


For flavored mayonnaise

Step 1:
Mix all these ingredients in a bowl

Mix in this consistency


For deep - fried mayonnaise

 Step 1 :
Mix the ingredients given in slurry consistency as shown

:Step 2
Dip the pressed potatoes in slurry prepared and fry it in oil

:Step 3
After potatoes gets crispy, transfer it to a plate
with tissues to absorb excess oil

Serving Suggestion:
  1. Place the deep - fried baby potatoes in a serving plate.
  2. Add the prepared mayonnaise and finely chopped onion on the top of fried potatoes while serving or else it will become soggy if you add it before.
  3. Serve it hot when the potatoes are crispy.
Top the crispy potaotes with mayonnaise preapared, finely chopped onion and coriander

 Notes: 
  1. Don't overcook the baby potaotes as it will absorb more oil and not become crispy as we expected.
  2. Don't over smash / press the potatoes as it will break while frying.
  3. You can also air fry or shallow fry the pototoes if you don't prefer deep frying.
  4.  You can also normal potatoes cut into wedges with skin if baby potatoes are not available.
  5. You can use the mayonnaise prepared for nuggets, fries, sandwich and burgers.
